Banana Cream Pie

4-5 bananas
juice of half an orange
3 heaped tbsp vegan margarine
3 tbsp demerera (brown) sugar
few drops of vanilla essence
For base: 6 digestive biscuits
big handful of oats
1 heaped tbsp marg
For topping, EITHER: soya cream or custard (made with arrowroot or cornflour, vanilla essence and soya milk)
or carton of Provamel vanilla soya dessert
or whipped tofu cream made according to your favourite recipe

1.) Making the base: Crush the biscuits to make crumbs, mix well with oats and marg, then press into a pie dish. Bake for 10 mins in a medium oven, then set aside.
2.) Chop the bananas and then put in a bowl, and coat with orange juice. Meanwhile, put the sugar and marg in a pan or microwave and heat on a low heat, stirring every so often, until the marg has melted and is just starting to boil and the sugar has dissolved in nicely to make a gloopy, toffeeish syrup. Add vanilla.
3.) Once the toffee has cooled, stir it into the bananas and then arrange them in the base. Top with the creamy/custardy topping of your choice, then shove in the fridge till needed. by Ronny
 

Sugar-Free Fruity Spice Cake

1 cup dates
2 cups cold water
1 handful sultanas or raisins
2-3 bananas (mashed)
1 cup white SR flour
1 cup wholemeal SR flour
1 tsp vanilla essence
2 tbsp veg oil

1.) Soak the dates in the water overnight, then blend into a syrup. Add oil and vanila essence to date syrup.
2.) Mix the dried fruit and flour together, then add liquid and mashed banana. Consistency should be slightly thicker than a normal cake mix, but still easy to mix, so add a splash more water if necessary.
3.) Pour into an oiled rectangular bread tin. Bake at gas mark 4 (180C) for an hour.
Top should be golden brown and a skewer inserted should come out clean.
 

Maple Syrup and Coffee Cake

200g wholemeal flour
3 heaped tsp baking powder
generous pinch of salt

6 tbsp gram flour
1 tsp cinnamon

100 ml very strong black coffee, (cooled to room temperature)
200 ml maple syrup
150 ml vegetable oil
1 tbsp vinegar

1.) Sift the dry ingredients and mix thoroughly.
2.) Pour on wet ingredients and mix well, then pour into a greased 8 or 9 inch cake tin and bake at gas mark 5 (190C) for 40 mins.
3.) Leave to cool in the tin. Turn out and ice with coffee icing, (icing made with coffee instead of water).
